CHEESE BITS

Although simply defined as "a wholesome article of food, made from the curd of milk, coagulated by rennet, separated from the whey, and pressed into a solid mass" the entire human population knows of its universal appeal, its many, many variations and its importance in Man's nourishment.

With Melton Mowbray already having a long-standing reputation for certain food products, among them Pork Pies and Stilton Cheese, and set to be the venue for an International Food Fair in 2004 now is the time perhaps to concentrate on a little research into other famous commodities many of which are readily available here and the pleasures of eating them.

(a) ITALY- This Cheese 2003 program follows some of the main themes that are always at the heart of Slow Food activities: education, promotion of quality production, protection of products at risk of extinction and improvement of local areas. As in past editions, European PDO and PGI cheeses, present again this year in the Great Hall of Cheese, will be a focus of attention. But what we wish to highlight in 2003 are shepherds’ cheeses, which will have their own market fair at the Shepherds’ Island.
(b) Italy is very rich in cheeses. A catalogue published in 1977 lists at least 451 cheeses. Therefore, to get into a detailed list of all the cheeses made in Italy would be extremely difficult. Throughout the peninsula, wherever there is a herd there is a copper pot to make the whey and a cellar where cheese, such as caciotta, robiola or caciocavallo, rest on wooden boards. The Great Cheese Market Producers, affineurs, artisan cheesemakers, shepherds from northern, central and southern Italy and Slow Food Presidia producers will display their wares and sell their outstanding cheeses to the general public.
